Late-Night Veggie Yakisoba

I made this dish last night because I didn't have dinner until quite late since I was busy working. I had some instant ramen noodles, but didn't want to just make a boring noodle soup. So what to do? Throw a bunch of veggies and eggs together and call it yakisoba.
Ingredients:
- Ramen noodles
- Eggs
- Carrots
- Onions
- Tree ear
- Scallions
- Garlic
- Vegetable oil
- Sesame oil
- Soy sauce
- Sugar
- Salt
- Black pepper
Directions:
- If you have dried tree ears, soak them in warm water to reconstitute them.
- Finely chop a quarter of an onion
- Chop about half a carrot into think matchsticks
- Finely chop a clove of garlic
- Once the tree ears have reconstituted. Cut each one in half and remove the base. This is the tough knot that looks slightly lighter than the rest of the fungus.
- Bring a pot of water to boil and partially cook the ramen. Cook a minute less than instructed on the package. In the end the block should have separated, but the noodles should still be firm.
- Drain the noodles and rinse thoroughly in cold water.
- Lightly beat two eggs, then stir in a bit of salt and black pepper
- Add a spoonful of vegetable oil to a pan on medium heat.
- Scramble the eggs until they solidify but are still soft. Don't break the egg up too much at this point, because you will stir it back in later.
- Remove the eggs from the pan and set aside. Clean the pan thoroughly if reusing.
- Add vegetable oil to the pan again and turn the heat to medium high.
- Add the garlic and sautee until fragrant and a bit browned.
- Add the onion and carrots. Sautee until the onions begin to brown a bit.
- Turn the heat to medium, add a bit of sesame oil, and then toss in the tree ear.
- Stir a bit more, then add a bit of water, soy sauce, and sugar.
15.. Let the veggies simmer until mostly cooked. - Add in the noodles, eggs, and some chopped scallions.
- Mix well and make sure the noodles evenly absorb the sauce. Once all the liquid has been absorbed or evaporated, turn off the heat and serve.
