Hot and Sour Cabbage

If you were wondering what the side dish in my fried chicken picture was, here's the recipe. Hot and Sour cabbage is a popular dish from Sichuan province. As the name suggests, the main condiments are chili pepper and vinegar.
Ingredients:
- Napa cabbage
- Rice vinegar
- Soy sauce
- Dried chili pepper flakes
- Sugar
- Salt
- Vegetable oil
Directions:
- Pull off about 8-10 leaves from the head of napa cabbage
- Wash the leaves by rinsing, soaking for 15-30 minutes, and rinsing again.
- Cut the cabbage into small pieces. It's best to cut each leaf in half lengthwise and then chop horizontally.
- Mix the rice vinegar, a bit of soy sauce, some chili pepper flakes, and a bit of sugar together in a bowl
- Turn the range to medium heat and bring the wok up to temperature
- Add a bit of oil and the cabbage. Stir fry until the sizzling has died down.
- Turn the heat to medium and add the vinegar solution. Stir to mix evenly, then cover and let simmer.
- The napa cabbage shouldn't take long to cook through. 1-2 minutes is probably enough
- Once the napa cabbage is cooked, add salt if necessary, then turn off the range and serve
