Potato Scallion Pancake

This is an experimental take on the egg scallion pancake using grated potato as the base for the batter. I think it turned out quite nicely. I was a bit too impatient and ate two pieces before I remembered to take a picture. So sorry about that.
Ingredients:
- Potato
- Onion
- Egg
- Flour
- Salt
- Vegetable oil
Directions:
- Peel the potato and slice it into quarters vertically.
- Place the potato in a container, cover with cold water, and add a spoonful of salt.
- Place the container in the fridge and let the potato soak overnight.
- Take the potato out, drain thoroughly, and then grate the slices down.
- Peel an onion and grate a bit of it into the potato mixture. You don't need much, it's just to add a bit of flavor.
- Crack an egg and beat it into the mixture.
- Gradually mix in flour until the batter thickens up.
- Add salt and chopped scallions.
- Add some oil to a non-stick pan and heat it on medium high.
- Once the oil is hot enough, add the batter and spread it evenly across the pan.
- Let the batter cook on one side until it firms up. You should see the edges on top start to change color.
- Flip the pancake over and cook on the other side.
- Continue cooking, flipping every now and then, until you get some nice browning on each side.
- Turn off the heat and serve on a plate.
And there you have it. The edges will be a bit crispy, but the center will be soft and chewy. You can dip it in soy sauce, or season it with additional salt and pepper.
