Garlic Ginger Shrimp

Here's a simple stir-fry shrimp recipe I made today.
Ingredients:
- 1 clove garlic
- 2 slices ginger
- Scallions
- Shrimp
- Tapioca starch (or corn starch)
- Salt
- Sugar
- Rice wine
- Vegetable oil
Directions:
- Peel and finely chop the garlic.
- Cut two slices of ginger
- Chop the scallions
- If necessary, peel and devein the shrimp (but leave the tail)
- In a mixing bowl, sprinkle salt over the shrimp, pour in rice wine, and coat with a bit of starch
- Turn the range to low and saute the ginger and garlic until fragrant
- Turn the range to medium high and add the shrimp. Stir vigorously for a bit and them let them cook on each side.
- Add water and turn to medium heat. Let the shrimp cook uncovered until they turn a bright pink.
- Add the scallions and sugar.
- Turn the heat to high again and reduce most of the water. Then turn off the range and serve.
