Chinese Egg Pancake

This is an easy Chinese breakfast dish that I made this morning. My mother used to make this for me on weekday mornings when I was a kid, since it was very quick.
Ingredients:
- 2 Eggs
- 4 Tablespoons flour
- Chopped scallions
- Salt
Directions:
- Crack eggs into bowl and beat well
- Add flour a spoonful at a time and mix evenly. Don't worry if there are small clumps
- Add a bit of salt
- Add chopped scallions. Stick to the leafy parts and leave out the stem parts
- Heat a non-stick pan on medium heat
- Add a spoonful of oil and spread it evenly across the pan
- Pour in the batter and tilt the pan to spread it across the entire pan
- Let it cook on one side until it mostly solidifies.
- Flip the pancake over and let it cook for a few more seconds
- Turn off the heat and serve it on a plate
That's pretty much it. If you'd like, you can add some savory toppings or sauces on the pancake. Soy sauce or oyster sauce would probably go well.
