This is an easy Chinese breakfast dish that I made this morning. My mother used to make this for me on weekday mornings when I was a kid, since it was very quick.


Ingredients:



  • 2 Eggs

  • 4 Tablespoons flour

  • Chopped scallions

  • Salt


Directions:



  1. Crack eggs into bowl and beat well

  2. Add flour a spoonful at a time and mix evenly. Don't worry if there are small clumps

  3. Add a bit of salt

  4. Add chopped scallions. Stick to the leafy parts and leave out the stem parts

  5. Heat a non-stick pan on medium heat

  6. Add a spoonful of oil and spread it evenly across the pan

  7. Pour in the batter and tilt the pan to spread it across the entire pan

  8. Let it cook on one side until it mostly solidifies.

  9. Flip the pancake over and let it cook for a few more seconds

  10. Turn off the heat and serve it on a plate


That's pretty much it. If you'd like, you can add some savory toppings or sauces on the pancake. Soy sauce or oyster sauce would probably go well.
